Crunchy Edamame Salad

Mel has listed below the numerous benefits of edamame beans:
1. They are a rich source of quality protein
One cup of edamame beans provides between 18-19 grams of protein. Not only this, but they are a ‘whole’ protein source- meaning that they provide all of the essential amino acids that your body needs.
2. They contain high levels of Vitamin K and Folate
Vitamin K helps to make various proteins that are needed for blood clotting and the building of bones. Folate, also known as vitamin B-9, is important in red blood cell formation and for healthy cell growth and function.
3. They contain higher levels of isoflavones
Isoflavones mimic the action of the hormone oestrogen and may have several health benefits such as anti-inflammatory, antioxidant and anticancer properties.
Crunchy Edamame Salad
Ingredients:
(4 servings)
- 0.5 cup uncooked quinoa
- 1.5 cups edamame beans
- 1.5 cups finely chopped red cabbage
- 0.5 cup chopped coriander
- 2 cups finely chopped kale
- 0.25 cup chopped roasted cashews
Dressing:
- 3 Tbsp peanut butter
- 2 Tbsp white wine vinegar
- 2 Tbsp agave syrup
- 1 Tbsp sesame oil
- 2 Tbsp soy sauce
- 1 Tbsp minced ginger
- 2 garlic cloves
- 1 tsp KIKI Health Nature’s Living Superfood
- 2-4 Tbsp water to thin
Instructions:
- Cook quinoa according to the packet instructions.
- Finely chop the red cabbage, kale, scallions, coriander and cashews.
- Roast your cashews in a skillet until golden.
- Make the dressing by mincing the garlic and ginger. Now mix all ingredients listed under ‘dressing’ in a bowl.
- Assemble the salad, top with the dressing and enjoy!
